A lovely winter pudding. Also excellent in Summer... and Spring... and Autumn...
You will need:
10 slices of bread; crust removed
4 extra large egg
50 ml sugar
625 ml milk
10 ml lavender culinary herbs
5 ml vanilla essence
125 ml sugar
37 ml corn starch
2 ml salt
250 ml orange juice
250 ml water
5 ml lemon zest
15 ml butter
Preheat the oven to 180°C and grease or spray an ovenproof dish.
Cut the bread slices into quarters and arrange them in the dish.
Beat the eggs and sugar together. Add the milk, lavender and vanilla and pour about ¾ of the mixture over the bread slices. Keep the rest aside for later.
For the filling:
Make a smooth paste with the sugar, corn starch, salt and some of the orange juice.
Bring the water and the rest of the orange juice to a boil.
Add the corn starch paste. Keep stirring while it comes to the boil again.
Add the lemon zest and butter and pour the filling over the bread.
Now add the rest of the egg mixture on top.
Bake the pudding for about an hour until done.
Serve and wait for the sound of smacking lips...
For extra oomph:
Add some desiccated coconut and/or raisins or sultanas.
